They did a segment on substitutions, one of the substitutions that caught my eye was the tuna melt. We all know that tuna melts are really high in calories between the bread, the mayo, and the cheese. The substitution they made was the Sweet Potato Tuna Melt.
I was looking at these on my television and thought that I really wanted to try it! This is an excellent way to cut down on the calories. From the sweet potato you get high amounts of nutrients for very little calories, this is also very filling. Here is the recipe! I encourage you to try this!
Ingredients:
- 1 large sweet potato (halved)
- 3/4 cup of canned tuna
- 1/2 cup of nonfat mayonnaise
- 1 teaspoon of roasted garlic onion seasoning
- 1/2 cup of shredded part skim milk mozzarella cheese
- lemon pepper to taste
- Preheat oven to 400 degrees F. Place potatoes cut side down on greased baking sheet until tender, about 30 minutes.
- Remove potatoes from oven and cool. Meanwhile, combine tuna, mayo and spices in a bowl and mix until well combined.
- Top potatoes with tuna, sprinkle cheese over top and place in the broiler until cheese melts, about one minute. Serve Hot.
The next thing I want to share with you is a Blueberry Banana Juice. This looks a little funky but tastes amazing! Super simple and super tasty!
Ingredients:
- 2 cups of blueberries
- 2 bananas
- 1 English cucumber
- 4 cups of spinach
- 1/2 cup of mint
- Put all ingredients in a juicer. Stir to combine the juices and enjoy!
